Mexican Stuffed Sweet Potato
These stuffed sweet potatoes are basically comfort food incarnate. You've probably seen them on Instagram or TikTok, and there is a reason they are trending - they're easy, quick, yummy and - of course - budget friendly. This recipe is Mexican inspired and one of my favourites- I didn’t work in a Mexican restaurant for 2 years without getting a craving for beans 24/7! Plus I have made this one quicker with a shortcut - cooking the sweet potato in the microwave. Maybe not quite as nice as an oven bake, but it certainly get the job done. Hey we're all busy people!
