I used to love egg-salad sandwiches as a kid, but as an adult, it feels a little too aggressive to go full egg salad sando. This is my variation on an old favorite - feel free to spice it up by adding slices of jalapeño into your pickled eggs/onions! Quick note on PICKLING (best to do this 24-hours in advance): I included sub-recipes on how to pickle the eggs and onion, but I do think this recipe is better if you pickle the onions WITH the eggs. It adds more flavor, but also gives the eggs a nice purple color ;)

Ingredients

1 can wild albacore tuna in water, unsalted
2 pickled eggs*
1 medium shallot, diced
