A Bright Eggplant N' Tomato Pasta
Literally what’s better than cooking with super fresh, locally grown produce? Idk probably nothing. I wanted to highlight these gorgeous ingredients in a simple way so BOOM, a lil bright eggplant n’ tomato pasta 🍅 The onion, scallion looking thing is a Tropea Onion and y’all it was phenom. Andddd the eggplants are a graffiti variety so super small, a little sweeter, and just straight up cute. Oh and yeah, there’s anchovies in it cause YUM. Don’t hate. 😘
