Adobada, what is it? Well think Al Pastor but without the trompo. If you make the pork marinaded in this adobo but grill it, in my part of Mexico from it's called adobada. Because no trompo, no pastor. While you don't have to make tacos out of this delicious pork, I think it is the quintessential way that it's served. But you can make tortas, quesadillas, rice bowls or anything else.
