Grilled Lime Steak and Romesco
This steak idea came from a trip with Provecho where @cheffinwithzach and I were cooking for a group and needed a quick way to boost the flavor with what we had on hand. We ended up slicing the skirt steak and tossing it with lime, olive oil, basil, and all the resting juices, almost like a warm steak salad, and it completely changed the way it ate. We were honestly blown away after that first bite, so it’s only right I share this method with you all. For this recipe, I paired it with a smoky red pepper romesco blended from charred bell peppers, and cashews..
