This gluten-free air-fryer coconut shrimp recipe is so yummy and a healthier take on the classic fried coconut shrimp! I use coconut flour in place of all purpose flour and almond flour in place of panko breadcrumbs to make a delicious and higher fiber coconut shrimp. Serve with your favorite veggies or side salad for some color and fiber and some white or brown rice for complex carbs that will help keep you fuller longer!
