For the record, this is one of my favourite soups...EVER! Honestly, it's just so wholesome and delicious. Random aside: I still remember falling in love with Minestrone at East Side Mario's when I was a teen. It was one of the sides you could get when you ordered a pasta. Between that, the caesar salad, and the unlimited garlic butter and bread, I enjoyed so many good times with friends!
