Chickpea Onion Pepper Stew (fajita Filling)
This is as close to a "throw everything into a pot and walk away" recipe as you can get, while cooking on the stove. It's high in protein (chickpeas!) and versatile (can be paired with rice, pasta; standalone, part of salad), and easy to season at meal time, allowing for a nice variety of flavours. Cost: $12.20 (assuming you use dry chickpeas, it will be around $13 if you use canned chickpeas). Note: These proportions are for meal prep. This whole recipe will last my partner and I over a week, eating this for lunch and dinner.
