Schnitzel is German for "thin" and it is less a specific dish and more of a preparation with hundreds of variations. In this case, Wienerschnitzel, or Vienna Schnitzel, comes from Vienna, the capital of Austria. Breaded and deep fried, this is the great-grandparent of all Schnitzel. Assumes 2 cutlets per person
