chicken-piccata-ish
While it totally is a classic for a reason, chicken piccata can be a little BLAH. Hence why I jazz mine up and call this one "ish". The spinach gives us some extra vitamins and nutrients while the bone broth adds flavor and protein to the sauce. It makes fantasssstic leftovers so you're definitely gonna want to make this one. I personally like to eat it with some pasta, but it would be fantastic over rice or cous cous as well!
