I've never been one for fancy salads.. Even though I do enjoy eating them once in a while, I never really bother to make them - except this one. I got learned this from a work potluck turned recipe book...or was it the other way around...Either way, the story goes like this: I was working at PSC shortly after moving back from Canada. In order to raise money for the charitable campaign, we created an e-recipe book featuring a contribution from every team member. To celebrate completion of the book - and to encourage us to use it - we had a team potluck where everyone brought in their dish. (Pretty ingenious now that I think about it.) As I filled my plate, I remember taking just a small spoon of salad to be polite. But as soon as I took my first bite - holy mama, flavour explosion. Needless to say, I went back for more!
