Instructions
1
In a medium bowl, whisk the honey, olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and black pepper until everything’s evenly blended.
2
Taste the marinade and tweak the salt or heat if you like. Put the chicken breasts in a large resealable bag or a shallow dish, pour the marinade over so they’re well coated, then seal the bag or cover the dish and refrigerate for at least 30 minutes or up to 4 hours.
3
While the chicken marinates, set the oven to 400°F. In a small bowl, gently mix the crumbled feta with olive oil, salt, and black pepper; set this cheesy blend aside.
4
Take the chicken out of the marinade, letting any excess drip off, and toss the used marinade. Place the breasts in a baking dish and spoon the feta mixture evenly over the top.
5
Slide the dish into the oven and bake 25–30 minutes, until the chicken hits 165°F inside and the feta is golden and bubbling. If you want extra color, broil 2–3 minutes at the end.
6
Let the chicken rest 5 minutes, sprinkle with chopped parsley, and serve warm, spooning any pan juices over the top if you like.
