4 boneless, skinless chicken breasts
Salt, to taste
Black pepper, to taste
1/2 cuphot honey
1/4 cuplow-sodium soy sauce
2 tablespoonsfresh lime juice
4 clovesfresh garlic, minced
2 tablespoonsolive oil
2 cupscooked rice or quinoa
2 cupsmixed vegetables, such as bell peppers, broccoli, and snap peas

Pat the chicken dry with a paper towel, then sprinkle both sides with salt and black pepper.

Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5 to 6 minutes on each side, until it’s golden brown and cooked through.

In a small bowl, mix together the hot honey, soy sauce, lime juice, and minced garlic. Pour the sauce into the skillet with the chicken.
